INGREDIENTS
1.5 lbs. (7cups) Okra
1 tsp cumin seeds
Pinch of Hing (asafetida)
2 onions, sliced
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp cayenne pepper
1/4 tsp turmeric
1.5 tsp chaat masala
1 Tbsp green chilies
1 Tbsp ginger, chopped
2 Tbsp fresh cilantro
Salt to taste
2 Tbsp ghee
INSTRUCTIONS
1. Wash and fully dry okra
2. Cut off the ends and shop into 1/4 inch pieces
3. Heat pan and add 2 Tbsp oil. Once pan is hot, add cumin seeds and hing
4. Add okra and turn heat up to high. Stir okra for 3 minutes or until it's 1/2 cooked
5. Add onion and stir for 1.5 minutes
6. Add spices and mix, turn heat down to medium and cover
7. Add chilies, ginger and cilantro and cover for 5~7 minutes, periodically stirring in between
8. Add salt, turn heat heat up to medium/high and add ghee before serving
