Gujiya

INGREDIENTS


For the Dough:

2 cups all-purpose flour 

¼ cup warm ghee

½ cup warm water



For the Filling:

1 Tbsp ghee

¼ cup of any type of chopped nut (coconut, raisins, pistachios, cashews, walnuts, almonds)

1.5 cups khoya

½ tsp green cardamom powder

⅛ tsp saffron

⅓ cup sugar



INSTRUCTIONS:

  1. Add ghee to flour. Slowly incorporate by hand and add warm water slowly

  2. Once dough begins to form a ball, break cluster apart 5-10 times 

  3. Rest dough for 30+ minutes

  4. While dough rests, heat pan and add ghee

  5. Add mixed nuts to pan

  6. Roast until nuts are light brown, about 2~3 minutes

  7. Add khoya, stir for 3~4 minutes

  8. Turn off heat and add cardamom powder and saffron, mix

  9. Let mixture cool completely before adding sugar

  10.  Add sugar and begin filling gujiya

  11. Take 1.5 Tbsp of dough and slightly flatten 

  12. Lightly coat in flour and begin rolling to create 5 inch circle

  13. Mix together 1 Tbsp water with 1 Tbsp flour to create paste and spread light layer over dough 

  14. Add 2 Tbsp filling into middle of dough and press edges together to make a ½ circle

  15. Fold edges in to seal the filling

  16. Heat oil in wok on medium heat 

  17. Add gujiya to pan, about 8 at a time

  18. Flip as gujiya continue cooking

  19. Continue frying until gujiya are light brown and bubbles form in the dough

  20. Remove from oil and enjoy!
